Caramel Apple Cheesecake with Streusel


This recipe is very scrumptious! It's also more work to make, but the end result is worth it and whomever you bake it for will love you more just for taking the time to make it!

This recipe calls for a number of ingredients, so I've broken them up to make it a little easier.
Ingredients for the Crust:

2 cups flour
1/2 cup brown sugar
1 cup (2 sticks) unsalted butter softened
Ingredients for Cheesecake Filling:

3 (8oz) packages of cream cheese
3/4 cup granulated sugar
3 large eggs
1 1/2 teaspoons vanilla extract
Ingredients for Apples:

3 Granny Smith Apples (Chopped)
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
2 tablespoons granulated sugar
Ingredients for Streusel Topping:

1 cup brown sugar
1 cup flour
1/2 cup quick oats
1/2 cup (1 stick) unsalted butter softened
Drizzle:

1/2 cup caramel topping







Before mixing your ingredients, preheat your oven to 350 degrees F and grease a 9 x 13 pan.
Let's start with the crust! In a medium bowl, mix the flour and brown sugar. Add the butter into your mixture while blending on a low setting for about 1 minute. Continue to mix with a fork until crumbly.
Then press evenly into your baking pan. I laid wax paper over top and used my hands to spread the crust out. The crust is very sticky, so the wax paper helped. Remove the wax paper and bake for 15 minutes.
While your crust is baking, prepare your cheesecake filling. In a large bowl, beat the cream cheese with 3/4 granulated sugar. Add eggs one at a time while still mixing. Then add your vanilla extract.
Pour your filling over your warm crust.
In a small bowl stir together your 3 chopped apples, 1/2 teaspoon ground cinnamon, 1/4 teaspoon nutmeg, and 2 tablespoons granulated sugar. Remember to peel your apples before chopping. :)
Spread your apple mixture overtop of your cheesecake filling.
Now to make the streusel topping! In a small bowl, combine 1 cup brown sugar, 1 cup flour, 1/2 cup quick oats, and 1/2 (1 stick) unsalted butter softened.
Spread your streusel overtop of your apples and bake for 40-45 minutes at 350 degrees F.
Remove from oven and drizzle warm caramel topping over top. Let cool to room temperature and refrigerate. Best served cold! :)
