Hawaiian Butter Mochi


If you are looking for a sweet and chewy dessert, look no further! This dessert has just enough sweetness to hit the spot, but not so much that you're left feeling full or questioning the number of calories you just ate!

You will need 10 ingredients to make this recipe. The first is not easy to find. I had my husband drive me to 3 different grocery stores looking for Mochiko Flour. Finally we decided to seek out an Asian Pacific market in the area and were met with success! However, if you don't have one of these markets near you, you can look on Amazon for the Mochiko Flour.

Ingredients Needed:

1 box (16 oz) Mochiko Flour
1 1/3 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
4 large eggs
1/2 cup honey
1 teaspoon vanilla extract
1 can (12 oz) evaporated milk
1 can (14 oz) coconut milk
1/2 cup extra virgin olive oil

Before beginning, preheat your oven to 350 degrees F. Then grease a 9 x 13 pan and set aside.


In a large bowl, mix your sugar, Mochiko Flour, baking powder, and salt together. Set aside.


In a medium bowl, whisk your eggs, honey, vanilla extract, evaporated milk, and coconut milk together. Slowly add in your virgin olive oil.


After mixing your wet ingredients together, add them to your dry ingredients and stir well.


Pour batter into your greased pan and bake in the oven for 1 hour or until the edges are golden brown.


Let cool to room temperature and cut into bite size pieces. We put vanilla ice cream on top to add just a little more sweetness. It hit the spot! :)
