This recipe for snowball cookies is perfect for those looking for a delicious and simple cookie for the holidays! It's got the taste of a traditional butter cookie with a twist! The pecans add the perfect crunch to this bite size cookie!
This recipe only needs 7 ingredients, most of which you probably already have in your home! :)
Ingredients Needed:
2 1/4 cup flour
1 cup powdered sugar
1 cup unsalted butter, softened (2 sticks)
1 egg
2 teaspoons vanilla extract
1/2 cup chopped pecans (crushed)
pinch of salt (little less than 1/8 teaspoon)
Topping:
1/2 cup powder sugar
Preheat your oven to 350 degrees F.
I doubled the recipe for this batch and it yielded a little more than 5 dozen cookies!
In a large mixing bowl, cream butter and powder sugar together.
Add the egg and vanilla. The texture of your dough will look a little funny at this point.
In a separate bowl, whisk your flour and salt together. I know this seems silly because it's just a pinch of salt, but it ensures that the salt is equally mixed.
Slowly add your flour mixture to your butter mixture and then blend well.

Crush your pecans! I put mine in a freezer bag. Then I took a rolling pin and pressed down hard repeatedly until the pecans were crushed up. I would not do this over any ceramic or glass surface as it could crack from the force.
Add your pecans to your mixture and blend well.
Roll your dough into balls and place on ungreased baking pan. Make sure to coat your hands in flour as the dough will be sticky!
Bake for 14-18 minutes. I baked mine for about 16 minutes.
Let cool and then dip in powder sugar to coat. :)
