Gingerbread Cookies

These cookies are soft and have just the right amount of Christmas spice! :) I made some to gift to my neighbors this Christmas and have received a lot of compliments on how tasteful they were!
This recipe requires 12 different ingredients. Most can be found in your pantry already, but some may have to be picked up at the store.

Ingredients Needed:
3 cups flour
1 1/2 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon ground ginger
1 3/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
6 tablespoons unsalted butter (a little less than 1 stick)
3/4 cup dark brown sugar
1 large egg
1/2 cup molasses
2 teaspoons vanilla
In a small bowl, whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves.
In a large bowl, mix your butter, brown sugar, and egg on medium speed until well blended. Add the molasses, vanilla, and continue to mix until well blended.
Gradually stir in dry ingredients until blended and smooth.
Preheat your oven to 375 degrees F. Grease your baking pans.
Prep your work station! I lay down wax paper and sprinkle it with flour.
Split your dough in half and knead the dough. Make sure to have flour on your hands and surface to prevent sticking.
Lay wax paper over dough and roll with your rolling pin. This keeps it from sticking and leaves you with smooth flat dough.
Dough should be about 1/4 inch thick.
Press your cookie cutter into the dough. I wiggle mine a little once I've stamped it to help separate the dough. I've always preferred metal cutters over plastic, but I'm sure either would work fine. I also opted for a snowflake cutter instead of a gingerbread man because I wasn't up for decorating dozens of little men. :)
Use a spatula to lift your cut cookies from the dough and place onto your baking pans. Bake for about 7-10 minutes. I baked mine for 7 minutes to get a softer cookie.
Remove from oven and place on wax paper or cookie drying rack to cool! I'm hoping Santa gets me a drying rack for Christmas!
Let cool and then ice and sprinkle! I did not make a homemade icing for this recipe, but instead used vanilla icing from the store. :) Enjoy!
